Oven Roasted Ratatouille

Ingredients
  • 3 zucchinis (courgette), chopped
  • 2 red pepper, chopped
  • 1 large red onion, diced
  • 2 eggplants (aubergine), chopped
  • 4 cloves of garlic, minced
  • 1 chilli, finely chopped
  • 2 tablespoons of extra virgin olive oil
  • 2.5 cups of cherry tomatoes
  • 1 tablespoon dried oregano
  • Cracked pepper, to taste
Directions
  1. Preheat oven to 180 degrees celsius
  2. Chop the vegetables into cubes and add to a large roasting tray
  3. Add garlic, chilli and olive oil to the tray along with the cherry tomatoes and mix well
  4. Season well with oregano and pepper
  5. Pop in oven and cook for 60 minutes. Take out of the oven every 20 minutes to stir
