Garden Vegetable Omelette

Ingredients
  • 1 tablespoon coconut oil
  • ½ white onion, diced
  • ¼ cup red pepper, chopped
  • ½ cup tomatoes, diced
  • 3 eggs
  • 1.5 tablespoons water
  • Salt + Pepper, to taste
  • 2 tablespoons chives, chopped
  • 2 tablespoons coriander, chopped
  • ¼ cup frozen peas
Directions
  1. Add onion, red pepper and tomatoes to a frying pan with ½ tablespoon of coconut oil and fry for around 5 minutes. Set aside
  2. Add peas to saucepan with boiling water and cook for approximately 3 minutes. Strain and set aside
  3. Crack eggs into a bowl, add water and whisk
  4. Add salt + pepper to eggs and whisk further
  5. Add the remaining coconut oil to a frying pan and pour in the egg mixture. Fry until the eggs are no longer runny
  6. Take the omelette out of the pan and top with all the ingredients (chopped chives, coriander, onion, red pepper, tomatoes)
