Whole Wheat Banana Muffins

Ingredients
  • 1¾ cups whole wheat spelt flour
  • ½ cups oats
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ cup walnuts, chopped
  • 3 large overripe bananas
  • ½ cup greek yoghurt
  • ¼ cup coconut oil
  • ¼ cup honey
  • ¼ cup peanut butter
  • 1 egg
Directions
  1. Preheat oven to 180 degrees Celsius or 356 degrees Fahrenheit
  2. Add flour, oats, baking soda and cinnamon to a large mixing bowl
  3. Roughly chop the walnuts and add to the bowl
  4. Mash bananas in a separate dish
  5. Add Greek yoghurt and coconut oil to the bananas and mix well to combine
  6. Add honey and peanut butter to a small saucepan and warm over a very low heat for around one minute until well combined. Pour into the dry flour mixture
  7. Add banana mixture to the dry flour mixture and stir to combine
  8. Lightly whisk an egg. Pour into the bowl with the other ingredients and mix well
  9. Fill muffin liners three quarters full and bake for 20 minutes or until the tops are turning golden. Stick a sharp knife through the centre and if it comes out clean they are ready
  10. Transfer to a wire rack to cool. Store at room temperature
