Almond, Fig & Cacao Cookies

Serves: 10-12 cookies
Ingredients
  • 2 cups almond flour
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • ½ cup cacao chips, chopped
  • 3 fresh figs, chopped into small pieces
  • ⅓ cup coconut oil
  • ¼ cup honey
  • 3 tablespoons almond milk
Directions
  1. Preheat oven to 180 degrees Celsius or 356 Fahrenheit
  2. Add almond flour, oats and baking soda to a large mixing bowl
  3. Chop figs into small pieces and add to mixing bowl
  4. If your choc chips are not already in bite sizes pieces, chop and then add to the mixing bowl
  5. Melt coconut oil and honey in a small saucepan over a very low heat for a couple of minutes. Add mixture to the dry ingredients and stir well
  6. Add almond milk and stir until everything is well mixed
  7. Shape mixture into balls and then flatten down with the back of a spoon
  8. Bake for 20 minutes or until golden
