BLACK BEAN AVOCADO WRAP

Ingredients
  • 2 whole-wheat or gluten free tortillas
  • ½ cup canned black beans, rinsed well under cold water
  • ¼ cup canned corn kernels
  • ¼ red onion, finely diced
  • 1 lime, juiced
  • 1 avocado, mashed
  • 6 cherry tomatoes, sliced
  • 4 sprigs coriander (cilantro), chopped
  • 1 cup rocket (arugula) or spinach
  • Salt + Pepper, to taste.
Directions
  1. Add black beans, tomato and corn to a bowl. Season with salt + pepper and half of the lime juice. Mix well.
  2. Mash the avocado with the rest of the lime juice and season with salt + pepper.
  3. Place the avocado down the centre of the wrap.
  4. Put the bean mixture and tomatoes over the top of the avocado.
  5. Top with coriander and baby spinach.
  6. Carefully fold up the wrap, tuck in the ends and enjoy!.
