HUMMUS SALAD WRAP

Ingredients
  • 2 whole-wheat or gluten free tortillas
  • ¼ cup hummus
  • 2 teaspoons seeded mustard
  • 2 carrots, grated
  • ½ beetroot, peeled and grated
  • 8 slices of cucumber
  • 5 sprigs fresh coriander (cilantro)
  • 1 cup of baby spinach
Directions
  1. Spread the hummus and mustard over the base of the tortilla.
  2. Put the grated carrot and beetroot down the centre.
  3. Place the cucumber, coriander and baby spinach on top.
  4. Fold up the wrap, tucking in the edges and enjoy!
