Ingredients
  • 400g whole wheat pasta
  • 1 (12-ounce) jar red peppers, drained and roughly chopped
  • 1 (6-ounce) jar pesto (about ¾ cup)
  • 3 handfuls fresh spinach or basil or rocket, finely chopped
  • 1 cup cherry tomatoes, chopped in half
Directions
  1. Cook the pasta as per the instructions on the packet. Strain water and run cold water over the paste for a few seconds. Pour into a large mixing bowl.
  2. Add the pesto and mix well to ensure all the pasta is coated.
  3. Add peppers, greens and cherry tomatoes. Mix well.
  4. You can eat this hot or cold, both are great!
