Vegetable Stock

Ingredients
  • 2 white onions
  • 3 celery stalks
  • 1 leek
  • 3 carrots
  • ½ cup of mushroom
  • small bunch of parsley
  • small bunch of thyme
Directions
  1. Roughly chop vegetables and add to a large pot
  2. Fill pot with water and bring to the boil
  3. When water starts to bubble, reduce heat and simmer for around an hour
  4. Let the stock cool and then strain the vegetables and store in an airtight container or freeze
