Raspberry & Mint Icy Poles

raspberry--mint-icy-poles When the sun comes out in London, the city comes to life and there is an amazing energy as everyone celebrates and appreciates the wonderful weather.

I got caught up in all the excitement and thought these icy poles would be a great way to celebrate the sun. They take around five minutes to make and are made with fresh fruit and sweetened with a little maple syrup.

I had fun channelling my inner child and eating these on a sunny day. If you have kids these would be a fun thing to make together. They are free of refined sugar and artificial sweeteners and packed full of delicious fruit.

I had trouble deciding what to call these, in Australia we call them icy poles/ice blocks, in the UK they are called ice lollies and in the USA they are called popsicles. I decided to stick to my roots and call them icy poles! One thing I do know, is that no matter where in the world you are, I’m sure you’ll love these on a warm summer’s day :)

 

Raspberry & Mint Icy Poles

Serves: 6
Ingredients
  • 1 cup raspberries, either fresh or frozen
  • 6 large strawberries
  • ½ cup water
  • 1 tablespoon maple syrup
  • 1 tablespoon fresh mint
Directions
  1. Add raspberries, strawberries, water, mint and maple syrup to the blender and blend on high for several minutes
  2. Pour mixture into moulds and place a wooden stick in the centre
  3. Freeze for several hours or overnight
